




Buffalo Chicken Flatbread
This one will make your lips burn! There's plenty of heat in this really simple flatbread pizza. The trick to making it so easy is the Flat Out flatbread and a George Foreman grill. If your family likes thin crust pizzas and a lot of spice I highly recommend this recipe.
I found these Flat Out Thin Crust Flatbreads at Publix. We really like the Spicy Italian because they have red pepper flakes.
I made this recipe for 3 flatbread pizzas. That's one for me and two for my husband. The package comes with 6 so you'll have some extras if you need it.
Ingredients:
3 flatbreads
PAM non stick spray
1 lb boneless skinless chicken breast
3/4 cup buffalo sauce
1 1/2 cups mozzarella cheese
3/4 tsp ranch seasoning
cayenne pepper and course pepper to taste
1 avocado
Directions:
First you need to marinate your chicken. I marinated mine overnight in 1/2 cup of the buffalo sauce. Just before cooking sprinkle both sides of the chicken with cayenne pepper and course ground pepper, as modest or generous as you feel your tongue can handle.
I like to use my George Foreman to grill chicken quickly because it stays so moist and tender. I preheated my GF grill to high. I had one large piece of chicken (~1 lb) so I cooked it on high for 5 minutes and then cut it down to med-high for 10 more minutes until the internal temperature was 165 deg F.
Remove chicken from heat and let rest for 15 minutes. Dice or cut into thin medallions. Coat pieces with 1/4 cup of buffalo sauce.
At the same time you begin cooking your chicken you should preheat your oven to 350 deg F. Spray both sides of the flatbreads with lightly with PAM, place on a baking sheet, and bake your flatbreads for 6-8 minutes until they just start to brown. You want to make sure they firm up so you'll have a crispy crust.
On each flatbread layer:
1/2 cup mozzarella cheese (or more)
1/4 tsp ranch seasoning
1/3 of chicken pieces
Place under broiler (low heat) for ~5 minutes or until cheese is melted.
Top with avocado slices and sprinkle lightly with cayenne pepper.
Cut into slices and enjoy!
