

Crockpot Buffalo Chicken
Doing Double Duty
Buffalo Chicken Paninis
(Yields 8 sandwiches)
3 boneless chicken breasts (~2 lbs)
1 ½ cups Moore’s buffalo wing sauce
1 pkg ranch seasoning
½ cup celery, chopped
2 cups mozzarella cheese
Ranch dressing
16 slices Texas toast or BBQ bread
Place chicken in slow cooker with buffalo sauce, ranch seasoning, and celery. Cook on low for ~8 hrs.
Shred chicken and mix back into sauce. Spoon chicken mixture onto slice of bread using slotted spoon to drain excess sauce. Top with ¼ cup mozzarella, drizzle of ranch dressing, then other slice of bread.
Toast sandwich on each side using grill pan or Panini press.
**Swap texas toast for 45 calorie wheat bread, ~321 calories each.
TIPS:
Put a layer of cheese between each side of the bread and chicken mixture to prevent the bread from getting too soggy.
You'll scoop about 1/4 cup of mixture for each sandwich, more if you have a manly eater like my husband. Anytime I'm plating his meal I double the portion of meat he gets.
Buffalo Chicken Fries
For just the two of us we only use half of the recipe for the paninis and then we have leftover Buffalo chicken. Since we like changing up our leftovers a bit to fight monotony then we use the leftover Buffalo chicken mixture to top fries.
If you're feeding a larger family and need all 8 sandwiches then double the chicken mixture so you'll have leftovers.
Ingredients:
1/2 Buffalo Chicken mixture from previous recipe
1 bag french fries
~2 cups mozzarella cheese
Ranch dressing
2 stalks green onion, chopped
Celery cut into small ribs
Directions:
Bake one bag of fries according to package instructions.
Reheat chicken mixture. You can add additional buffalo sauce if it looks dry.
Layer fries in oven safe dish. Top with chicken mixture, mozzarella cheese, and ranch dressing. Place under broiler until cheese is melted.
Top with green onions and serve with celery.
TIPS:
If you are watching the carbs or just love sweet potato fries this is a great place to swap out the pototoes. The Alexia sweet potato fries with Chipotle seasoning work great.
This could easily serve 3-4 people but considering how much my husband eats it's just enough for the two of us.
