Chicken and Sausage Gumbo

This is my hubby's favorite version of homemade gumbo. I prefer one with a roux base but this one's so easy to throw in the crockpot it's hard to pass it up.

1 lb chicken breast, seasoned with Creole seasoning

1 lb smoked sausage, sliced

2 cups okra

1 cup celery, chopped

1 can Rotel

1 can Hunts Diced Tomatoes, Spicy Red Pepper

1/4 cup flour

4 cups chicken broth

2-3 tbsp creole seasoning

1 tsp blackening seasoning

½ tsp oregano

S&P to taste

3 cups cooked rice

 

Brown sausage in skillet. Add celery and cook until almost tender. Add to crockpot.

 

Add tomatoes and rotel. Sprinkle flour over tomatoes and stir.

 

Place all remaining ingredients into crockpot except rice and okra. Cook on low for ~6 hrs.

 

Remove chicken, shred, and add back to slow cooker.

 

Add okra about 1 hour before serving.

 

Serve over rice. Don't forget your favorite crusty bread to sop up every last drop!
