Cilantro Lime Shrimp
I threw this shrimp together one night in preparation of a work week lunch. It tasted so buttery I couldn't believe there wasn't a trace of butter in the dish. My husband tasted it and said we could have it for dinner as a swap for shrimp scampi. Hey that's a big statement considering my husband thinks shrimp only comes in two forms-popcorn or scampi.
This one's definitely going in my favorites list.

Ingredients for 1 serving:
According to MyFitnessPal 145 calories
4 oz uncooked, peeled, and deviened medium shrimp
1/4 white cooking wine
1 tbsp taco seasoning
1 tsp chopped cilantro
1 tsp lime juice
Heat skillet to medium heat. Add shrimp, white wine, and taco seasoning. Cook for 3-4 minutes.
Add cilantro and lime juice and cook for an additional 3-5 minutes until shrimp is pink throughout.

Make this delicious taco salad using the shrimp. Incredibly easy to pack for a work week lunch!
Add shrimp and 1/2 cup black beans to small bowl (heat this bowl for 30 sec before enjoying salad)
2 cups shredded lettuce
1/2 avocado, cubed
1/4 cup salsa verde
1 oz tortilla chips
