Cranberry Walnut Oatmeal

I can put all of these ingredients into a ziploc bag to pack in my lunchbox. Once I get to work I put it in a bowl, add water, and cook it in the microwave.

Ingredients:

 

1/4 cup old fashioned oats

2 tbsp Log Cabin sugar free maple syrup

1/2 tsp ground cinnamon

2 tbsp dried cranberries*

2 tbsp walnut pieces

~1/2 cup water

 

In a small ziploc bag add all ingredients except water. Crush walnuts until they are chopped pieces. Now you have a package of oatmeal ready for your breakfast in the morning.

 

Add the bagged mix to a microwave safe bowl. Add water until it covers the mixture entirely with about 1/2" above.

 

Microwave for 2 minutes, stirring frequently. WATCH it carefully as oatmeal will overflow your bowl quickly.

 

If the oatmeal is still too runny microwave for 20 second intervals until reach desired consistancy. Letting it sit covered will help to thicken the oatmeal.

 

*The dried cranberries will reconstitute during the cooking process. If you prefer for them to stay dried then add at the end.
