



Pico de gallo
This is so easy to make there's no reason you should be buying it in store. It tastes so much better homemade anyway!
Ingredients:
2 medium tomatoes, diced
1/2 purple onion, diced
juice from 1/2 lime
handful cilantro, chopped
1-2 tbsp diced jalapenos (we prefer pickled over fresh)
dash salt
I prefer to use only the outer flesh of the tomato and discard all of the gooey seed part.
In a large bowl add diced tomatoes. Add lime juice and salt to tomatoes.
Add onion. You want approximately 1/3 the amount of onion as you have tomato.
Add cilantro and jalapeno.
Depending on the size of the bowl you could place the lid on and shake to distribute the ingredients easily. Since my bowl wasn't large enough for that I tossed it with two forks like a salad.
TIPS:
You can adjust the amount of each ingredient to meet your taste preferences.
Let it sit in the refrigerator before serving so the flavors will meld.
