
Peanut Butter Popcorn Balls
Ingredients:
~3 oz kettle corn popped (one large bag)
1 regular size bag mini marshmellows (~10 oz)
1/2 bag of Reese's peanut butter baking chips
3 tbsp butter
non stick cooking spray


Spray large pot with non stick cooking spray. Melt butter.
Add marshmellows and melt over med-low heat, stirring constantly, until there are very few lumps remaining. Remove from heat.
Add popcorn in handfuls to prevent pouring unpopped kernels into the pot. Add peanut butter chips.
Spray spoon and fold the ingredients together carefully until peanut butter marshmellow mixture coats the popcorn evenly.
Spray both hands with non stick spray. Gather a handful of the popcorn mixture and press firmly into a ball. Place on parchment paper to let set.
Makes approximately 6 fist sized balls.
TIPS:
Pop an extra bag of popcorn to have on hand in case there is too much marshmellow. The popcorn can break into pieces easily or the bag may not pop entirely which can mean the actual amount of popcorn you get from a 3 oz bag of popcorn varies.
The butter is an important part of the marshmellow mixture. If you do not add the butter the popcorn balls will harden too much and be difficult to eat.
Spraying your hands helps prevent the mixture from coating your hands when you're forming the balls.
If you double this recipe to make a dozen then you will need a large pot so that you can stir the mixture without breaking up your popcorn.
