
Ritzy Ranch Chicken Tenders
This is comfort food Ritzy style. The buttery crackers make a wonderful crispy crust and the chicken is so tender from marinating overnight in buttermilk. It's really easy and great for picky eaters.


Mix chicken tenders with buttermilk, ranch seasoning, and salt. Marinate overnight.
Crush two sleeves of crackers with pepper.
I like to do both of these steps in two ziploc bags so clean up is a breeze.
Line a baking sheet with foil and top with a roasting rack. Spray the rack gererously with non-stick spray.
Remove a piece of chicken from the marinade, drain excess liquid, place into crushed crackers and shake gently until crumbs coats the piece entirely. Repeat for each piece of chicken.
Place coated chicken tenders on rack. You can take leftover crumbs and top the pieces once they are on the rack. Press the extra crumbs gently onto the chicken.
Bake at 375 deg F for 25 minutes or until chicken is cooked through to 165 deg F.
Serve with ranch dressing for dipping. My husband also loves them served with chicken gravy!
Ingredients:
1 to 1 1/2 lbs chicken tenders
1 cup buttermilk
1 pkg ranch seasoning
1 pinch sea salt and course pepper each
2 sleeves Ritz crackers*
Ranch dressing or chicken gravy for dipping
*We prefer to use the low sodium Ritz crackers or else the crust tastes too salty. If you use regular Ritz crackers omit the additional salt.
