BBQ Chicken Won Ton Tacos
Ingredients:
1 lb boneless, skinless chicken breast
1/2 cup BBQ sauce
2 tbsp butt rub seasoning
16 won ton wrappers
4 slices pepperjack cheese
3/4 cup shredded lettuce
1/4 cup chopped green onion
3/4 cup salsa

Preheat oven (preferrably toaster oven) to 350 deg F.
Lay out 16 won ton wrappers and spray both sides with non-stick spray.
Hang each wrapper over the grates of the oven rack. This is why I prefer to use my toaster oven because the grates are closer together which means I can make "stand and stuff" shellsby folding them across two grates at a time. If you use your regular oven you will have to fold them across only one grate.
Place in top rack of oven. Put a pan underneath the hanging shells to prevent any direct heat from burning the tips before the rest of the shell gets crispy.
Bake for 15-20 minutes until the shells are golden brown. Watch them carefullly so they do not burn.

When removing the shells from the rack be very gentle. A few of them may "hug" the rack which means you'll have to tug or pry until it comes off without breaking.
Cut each cheese slice into 4 smaller triangles.
Place each triangle into a won ton shell.
Grill chicken until internal temperature reads 165 deg F.
Let rest 10 minutes. Slice into thin slices and places 1 or 2 slices into each shell.
Top with lettuce and green onion. Serve with salsa for dipping.
