Tuna Salad Mixture:

1 (3.5 oz) can Albacore tuna, drained

2 tbsp Greek yogurt

1 tbsp Sherry vinegar

1 tbsp pepperocini brine

juice of 1/4 lemon

1/2 tsp dry minced onion

1/4 tsp garlic powder

pinch dried mint

pinch marjaram

dash pepper

 

Salad:

2 cups chopped lettuce

1/4 cup red onion, sliced

2 tbsp black olives, sliced

4 slices cucumber (optional)

1 small tomato, cut into 4 wedges

3 pepperocini peppers

1 tbsp feta cheese

1tsp olive oil

 

Flatread crisps:

1 whole wheat flatbread (~100 calories)

non-stick spray

pinch garlic powder

pinch dry minced onion

pinch cayenne pepper

dash dried mint

 

 

Preheat oven to 350 deg F. Spray both sides of the flatbread with non-stick spray. Sprinkle seasonings on one side. Bake flatbread for 5-8 minutes or until crispy and slightly browned. Break flatbread up into large, rustic-shaped pieces

 

In a small bowl mix the ingredients for the tuna salad mix.

 

On dinner plate layer: lettuce, tuna salad, vegetables, feta cheese, olive oil, and flatbread pieces.

 

 

 

 

 

Greek Tuna Salad

 

I recently discovered the delicious flavors of Greek cuisine. I love a big Greek salad with gyro meat topped with red onions, olives, pepperocini, and crumbled feta.

 

I was thinkng one day that I had those things at home but of course no gyro meat and honestly needed something a little healthier than gyro meat.

 

So I opened a can of tuna and started mixing in what I could to make it a Greek inspired version of tuna salad. Then I piled that creamy mixture onto crisp lettuce and topped it with those classic Greek veggies, feta cheese, and a drizzle of olive oil. I crisped up a seasoned whole wheat flatbread to represent the pita normally served with Greek dishes.

 

The tuna salad mixture itself has enough moisture in it that you won't need a dressing but the drizzle of olive oil takes it over the top.

 

I left out the cucumbers and fresh tomatoes that are common in Greek dishes because I'm not a fan. Be sure to add those if you appreciate their flavors to get a full Greek experience.
