
Kickin' Tortilla Chicken
My hubby and I love this meal and I love it more because he can make it entirely by himself! Seriously though, I like it when he makes it because he adds way more seasoning than listed so it's packing some flavor. He actually made and plated the one in the picture below...did a good job didn't he?
Ingredients:
3-4 chicken breasts
4-5 oz tortilla chips, crushed*
1 pkg taco seasoning
2 tbsp Weber Kick'n Chicken Seasoning (optional)
2 tbsp honey
1 tbsp lemon juice
1 cup pepperjack cheese, shredded
*you can use your favorite tortilla chip variety but we recommend Golden Flake Mazietos, Lay's Baked Tostitos, or Lay's Multigrain Tostitos.
Directions:
Mix honey and lime juice in bag. You can marinate the chicken overnight but lime flavor will be more intense. Place chicken in bag and coat well.
Mix tortilla chips and seasoning in dish. Coat chicken in chips.
Spray a glass casserole dish with non stick spray to prevent sticking. Place coated chicken in dish. Pour leftover chip crumbs over the tops of chicken.
Bake at 375° for 40-45 min or until done. Top with cheese and allow to melt. Top with Pico de Gallo.
Serve over refried beans.
