Thai Noodle Soup

makes 4 servings

 

1 carton Swanson's Thai Ginger broth

3 oz rice noodles
1 cup celery, chopped
10 baby carrots, sliced into medallions

1/2 cup orange bell pepper, diced

1/2 cup mushrooms, sliced

1/4 cup green onion, chopped

1 tbsp lime juice

pinch red pepper flake

 

 

 

Add all ingredients except rice noodles and green onion to a pot and bring to boil.

 

Boil for approximately 30 minutes or until vegetables are tender.

 

Add noodles and green onions and follow instructions for cooking rice noodles. Usually remove from heat and sit for a specified time. If you are using regular noodles you may need to continue boiling.

This would be what you call "semi" homemade. I found the Swanson's Thai Ginger broth which is already deliciously flavored for a quick and easy soup. I just threw in some veggies and rice noodles and served it along side an egg roll. It was one of those, O.M.G. this is too delicious to be this easy, moments. The broth is so flavorful you don't need a lot of ingredients. Thanks Swanson!
