Yields 2 sandwiches:
2 sandwich buns
2 (6 oz) chicken filets
cajun seasoning
2 leaves romaine lettuce
2 tbsp sliced black olives
2 tbsp ranch dressing
Creamy avocado spread:
1 very ripe avocado
2 tbsp lime juice
1/2 tsp garlic powder
salt and pepper to taste
Sprinkle each side of the chicken filet with cajun seasoning and grill until internal temperature reaches 165 degress F.
Toast bun. Mix ingredients for avocado spread and spoon half of it onto each top bun.
On each bottom half of bun layer ranch, lettuce, chicken, black olives and then top bun with avocado spread.
Cajun Chicken Sandwich with Creamy Avocado
I needed to use up some hamburger buns as well as an avocado. Well, I already had chicken filets ready in the freezer for a quick sandwich meal too.
So I took the really ripe avocado and mixed it up with lime juice for a spread. Boy was it a welcome addition to this sandwich.
In our venture of eating healthier I've made some things that are not keepers. This one is a keeper. I scarfed it down it was so good. Then I couldn't help but think of when it would make a reappearance on the menu.
Honestly, I think it would be way more awesome on a ciabatta rather than a hamburger bun but as I said...it's what I had and needed to use.
