Wash and thinly slice potatos. I used the thinnest setting on my mandolin.
Place potato slices in a large bowl of cold water. This removes the starch from the surface which helps them crisp up.
Layer the slices on a paper towel then top with a paper towel and press until all of the excess moisture is absorbed.
Now here's the trick that I learned:
Take a layer of DRY paper towel. Spray with nonstick cooking spray.
Lay dry potato slices on paper towel in one layer. If they overlap at all they will stick to each other and won't cook evenly.
Spray the top side of the potato slices with nonstick cooking spray. Sprinkle on desired seasoning.
Place in the microwave with the paper towel.
Microwave for 1-2 minutes. Check for crispiness. It all depends on your microwave how quickly these will cook. If they still have not begun to crisp then continue for 30 second intervals until they start to firm up.
Once you take them out of the microwave they will begin to crisp up further, just like bacon. Don't let them burn!
The key is to have a dry paper towel underneath the slices while they are cooking because it helps absorb the moisture as it cooks out. If your paper towel is damp then the potatoes won't crisp well but may also stick to the paper towel. Spraying the paper towel with nonstick spray not only helps prevent sticking but also helps crisp up the underside of the potatoes.
These chips turned out so much better in the microwave than in the oven. And it's definitely something kids could help with.
These are best eaten soon after cooking. Though they will still taste ok the next day I suggest sticking your bowl of chips in the microwave for about 30 sec to freshen them up.
NOTE: I was a bit overzealous with the amount of potatoes I sliced up and ran my microwave consistently for too much time. It overheated and took about an hour to cool down. Don't do this. Either don't slice too much or give your microwave a breather. My microwave and I have a much better understanding of each other now.
Unfried Potato Chips
I got a mandolin and wanted to make my own baked potato chips. Baking them in the oven just wasn't getting it because some of them were undercooked and some of them were burning.
So I did a quick search on the internet to find the best method. I ran across this website, Spark Recipes, for microwaving your potato chips and it worked! I found a way to do it that worked best for my microwave and that's what I've shared below.
