Eric's Vegetable Beef Soup
Serves 6-8
Ingredients:
1 ½ lbs ground round
4 cups vegetable broth
2 cups chicken broth
1 (10.75) oz can tomato soup
1 (6 oz) can tomato paste
1 large bag Pictsweet Vegetables for Soup
1 can Veg-All, drained (optional)
1 pkg McCormick Beef Stew seasoning
1 onion, whole
1 cup celery, diced with leaves
1 tsp dried oregano
1 bay leaf
½ tsp onion powder
½ tsp garlic powder
1 tsp black pepper
1 tsp course sea salt
Dash hot sauce
Brown meat and drain. In skillet mix stew seasoning with ½ chicken broth. Stir and allow to thicken. Add meat, stir, add remaining chicken broth. Simmer for 15 min.
In crockpot add all ingredients. (Crush oregano as adding.) Stir well and cook on low all day.
Remove bay leaf. Add additional seasonings to taste.
Ashley's Vegetable Beef Soup
Serves 6-8
Ingredients:
1 lb of leftover shredded roast beef with any extra potatos and carrots
4 cups vegetable broth
2 cups chicken broth
1 (10.75) oz can tomato soup
1 (6 oz) can tomato paste
1 pkg McCormick Beef Stew seasoning
1 onion, whole
1 cup celery, diced with leaves
1 tsp dried oregano
1 bay leaf
½ tsp onion powder
½ tsp garlic powder
1 tsp black pepper
1 tsp course sea salt
hot sauce to taste
Add about 4 cups of your own favorite vegetables but this is what I added based on what my husband likes:
1 1/3 cup diced hashbrown frozen potatoes
2/3 cup corn kernals
2/3 cup okra
2/3 cup green beans, frozen
2/3 cup baby lima beans, frozen
Take remaining roast with potatoes and carrots and store separately until ready to serve.
In crockpot add all remaining ingredients. (Crush oregano as adding.) Stir well and cook on low all day.
Add leftover roast, potatoes, and carrots and heat through.
Remove bay leaf. Add additional seasonings to taste.
Vegetable Beef Soup
There's nothing more satisfying than soup during the winter, especially when it's full of tender vegetables.
My husband's not a big fan of soup and definitely not when it's full of vegetables. (Rolling eyes). But his favorite version of vegetable beef soup is made with ground beef. That's the first recipe given.
My favorite is when I have leftover roast shredded up in it. On my last attempt making the soup I traded out the bag of mixed vegetables and added a variety of our favorites in an attempt to satisfy him a little more. That meant leaving out all of the diced carrots and green peas and adding extra potatoes. I still got to enjoy some carrots that were left over from the roast but since they were whole baby carrots they were easy for him to pick out.
