Ingredients:

 

1 avocado

4 oz chicken, shredded (I cheated and used a canned variety that I had on hand)

1 clove garlic, minced

1 tbsp red onion, diced

2 tbsp lime juice*

2 tbsp diced jalapenos

2 tbsp salsa verde

Dash red pepper flake

S&P to taste

 

Mash up the avocado with lime juice. Mix in remaining ingredients and stir.

 

Makes ~2 cups. According to MyFitnessPal it equals to 390 calories. You could divide it in to 2 servings but I'm usually a hungry chick at lunch time so I ate the whole thing 8-/

 

*Although many prefer "all natural/fresh" options I've found that the bottled lime juice helps prevent browning of the avocado much better than a fresh lime. Just a tip if you're ok using the bottled stuff, especially if you're wanting to make this the night before for your lunch.

 

This would be great on a sandwich, tortilla, with tortilla chips, or with veggies. This turns out as more of a dip consistency so I would add more chicken to thicken it up for a sandwich. 

 

I love tortilla chips but I cut  up a fresh banana pepper to substitute for 1/2 of the chips to save on calories. It was a delicious meal.

 

Spicy Avocado Chicken Salad

We've all seen the Pins where mayo is replaced with avocado. Well I've got to say that I thought it was a great idea so I found me a super ripe avocado and went crazy in the kitchen.

 

Ever since I've read how spicy food boosts your metabolism I make everything spicy. Hey a girl's gotta try what a girl's gotta try to slim down. It's not too far out of the ball park for me considering I love spicy food anyway. So of course I added a kick to my chicken salad.
